Coconut tahini granola with turmeric yogurt
Level up your Sunday morning breakfast: turmeric’s earthiness pairs beautifully here with yogurt, floral, gooey apricots, and sweet-salty granola, with cherries on top.
Coconut Tahini Granola
3 c old fashioned oats
2 c unsweetened, flaked coconut (*flaked—not shredded. Shreds will burn)
½ c raw sunflower seeds
½ c raw pepitas
½ c tahini
⅓ c maple syrup
1 tsp vanilla extract
2 tsp Diamond Kosher Salt (adjust down if using any other type of salt)
Preheat the oven to 350F. Combine dry ingredients in a large bowl, stir together wet ingredients in a small bowl, and pour over dry ingredients. Stir together until the oatmeal mixture is evenly coated. Spread onto a walled baking sheet lined with parchment for easy cleanup. Bake for 10 minutes, stir, return to oven. Bake for 5 minute intervals until done, stirring in between to ensure even cooking. Granola is done when the oats and coconut flakes are golden brown and fragrant. Store in an air tight container as soon as it has cooled.
Pomegranate Molasses & Sesame Roasted Apricots
While your granola cooks, prep the apricots, but wait until granola is done before putting them in the oven — they’ll increase the humidity in the oven which will give you sad granola.
Halve your apricots & remove stones, 2-4 halves per person. Place apricots in a medium-sized bowl & give them modest drizzles of pomegranate molasses and olive oil. Gently toss to coat, and sprinkle with sesame seeds. Place the halves cut-side up on a foil-lined baking sheet. Bake in a 350F oven for 20-30 minutes, or until smooshy-gooey and browned. They will be puffed up, like you’ve taken a bike pump to them; this is a good thing. Hit them briefly with the broiler at the end of baking if you’d like a richer caramelization on top. Watch closely to prevent burning. Let cool 10-15 minutes before serving.
Turmeric Vanilla Yogurt
⅔ c full fat Greek yogurt per person
1 tsp ground turmeric per person
½ tsp vanilla extract per person
1 tsp maple syrup per person
Stir together until everything is incorporated and the yogurt is a dreamy shade of daffodil yellow.
